Vegetable ulundu vada


soaked and ground Urad dal - 250gms
chopped onions - 1 cup
grated potato, cabbage - 1 cup
grated ginger - 5 tbsp
salt to taste
corriander, curry leaves chopped - 1/2 cup
chopped chilli - 2
chat masala - 1/2 tbsp
oil - to deep fry
mustard seeds - 1 tbsp
jeera powder - 1 tbsp
asafoetida - a pinch
turmeric powder - a little


In a pan heat a spoon of oil and put mustard seeds, onion, vegetables, ginger, chilli and all the powders including salt and stir till vegetables are half cooked and now add the ground(grind) urad dal, lower the flame and mix well as shown below:

Now heat oil to fry in other pan and make small vada of this mix.
This vada is very tasty and very healthy as its a mix of urad dal and vegetables. Grated vegetables like carrot, beetroot can also be added. These types of vada are very good for kids and they will really love it as its cripy on the top and softer inside.

Goes well with coconut chutney or can be eaten as it is.
